The concept
Ninety percent of your serotonin is made in your gut. Your microbiome sends electrochemical signals to your brainstem along the vagus nerve. The food on your plate tonight is not decoration — it is data.
Each course targets a specific brain pathway, backed by peer-reviewed evidence. Before the first plate arrives, your neurological baseline is established. After the last course, it is returned to you — as a precise, personalised account of where you are, and where your food choices are taking you.
Three acts
Act 1 · Arrival
Before the first course arrives, your starting point is established. A brief, validated protocol — completed over drinks — maps your gut health, dietary baseline, and neurological readiness. The dinner begins before the food arrives.
Act 2 · The dinner
Six brain-targeted courses, each with a table card that names the mechanism being activated. Between courses, your dietary data is updated in real time. The science is not presented — it is experienced, course by course.
Act 3 · After dinner
All measurements converge into a single personal report — generated in the room. Your gut health profile, your neurological risk factors, your priority food actions. Not a diagnosis. A precise starting point for everything that follows.

La Mesure is available as a private event hosted within clinics, retreats, and medical residences — for guests who already understand the value of precision health, and want to experience what food can reveal.
Each edition is limited to 8–16 guests. Every seat is by invitation or direct enquiry. La Mesure is not a public dinner.
